Everyone probably knows that if you shoe string any kind if potatoes, and toss with oil and salt, or others seasons like a tuscan mix, or oil and vinegar and salt, you will get a way lower fat version of french fries, if you are just a little more patient. We have a two size extruder/press, and I have a curly fry blade for my food processor, and two crinkle cutters.....we have delicious fun with those.
But baked sweet poaotaoes, probabaly known more properly as yams, (I mean the elongated at lease one pointy ended deep orange tubers, ok ) are excelent dry baked, because they naturally carmelize if you take your time and do not rush it, butter is optional. We also peel and chunk them, toss them with oil and salt and Mmmm...that is good if cooking time needs reduced. But today's recipe is for chips or leathers.
Peel one potatoe per baking sheet. Slice it to a 1/8 inch width, in rounds or planks. Rub your hands with extra virgin coconut oil,then run onto each slice, and place on a baking stone or baking sheet with sides. Coconut oil at our house is hardened, and I can use as little as 1tsp per potatoe. It will make you hands feel great afterward, all day. BTW, I use the same cold pressed coconut oil for body lotion, deep conditining my hair, making home made cosmetics, and as a daily oral cleanser soemtimes...Good stuff.
Well, bake your sheet of sweet potaoe slices in a hot oven until soft, and browning at least at the edges...A pretty fast snack and an nexcelent source of immune boosting beta cartone. I wish that my baked kale chips would be so good...I am still working on that recipe.
