First of all, the suggestions can be used with any kind of lean ground meat. We use freshly ground turkey form the local farmers market. it is made of a mixture of while and dark meat, usually legs and thighs. Never eat the crappy grinds that contain so much fat they don't shape-up and form into burgers or into meatballs etc...gross!
Usually into the meatball or the meatloaf goes certified gluten-free oats, or torn-up pancakes from breakfast,leftover rice, or stale rice bread....but not when you are not allowed any grains. So, I put in: oregano, grated carrots, and grated zucchini...and this time no onion...then salt to taste. They were good, even better the second day. The second day, nobody would have known they were not made with bread or grains...
For the spaghetti dilemma, I served it like a buffet line---meatballs in one bowl, heated sauce in pan, and spinach rice noodles on a bowl for those that may...The kids ate the noodles and sauce and we ate only the meat and vegetables.
